Just add a green salad and fresh Italian bread. 1/4 cup olive oil 1 clove garlic, minced 4 cups broccoli florets cooked tender-crisp (blanch 3 minutes in salted water) 2 cups Italian tomato sauce 1/2 pound ziti, cooked according to package directions 1/4 cup grated Parmesan cheese 1 pound part-skim ricotta cheese 1/4 cup seasoned bread crumbs 2 tablespoons toasted wheat germ Heat the olive oil in a skillet; saute the garlic until softened but not brown. Stir the broccoli into the garlic oil and set it aside. In a 9 x 13-inch stainless steel or glass casserole, layer half the tomato sauce, half the ziti, half the grated cheese, all the broccoli, all the ricotta, the remaining ziti, and the remaining sauce. Sprinkle with the crumbs, wheat germ, and remaining grated cheese. Cover with foil and bake in a preheated 350-degree F. oven for 35 minutes (longer if prepared ahead and refrigerated).
